11. Rethinking the Value of Fats in Our Diet
The Framingham Study promoted the idea that cholesterol caused heart disease, even though their data showed the opposite. Historical evidence from the Inuit people of Canada showed that they ate diets high in saturated fat and cholesterol and showed no evidence of heart disease or cancer. Many medical voices in our country tried in vain to promote the benefits of a high fat diet to lose weight and avoid heart disease.
