Man-made trans fats have replaced natural saturated fats in our diets through the rise of processed foods. Science has shown a steep decline in our national health and rise in chronic diseases since the 1970s as manufactured fats replaced fatty acids in our diets. When trans fats replace fatty acids in our cell membranes, they wreak havoc on our health in many ways.
